65. Microwave Chocolate Mayonnaise Mug Cake

Day 65 of Corona Baking Mayonnaise replaces eggs and oil in this small batch baking. The portions were so small I felt like I was making an Easy Bake Oven cake. The cake tastes fudgy, very chocolatey, and a bit dry. Next time I’ll reduce the amount of chocolate and add a little coffee.
